TO USE THE PUERH KNIFE
Firmly hold the tea cake with your non-dominant hand and with your dominant hand, insert the pick horizontally, about 1″ into the side of the cake. Gently pry away the desired leaves and gather them up in a single cup or pot. It is very important that you do not inset the pick vertically downwards or in the direction of your hand.
